Oh coconut, how I’ve missed you. But, now you’re back! So, let’s have a torrid love affair in the shape of a truffle, okay?

Vegan, Nut-Free, Sugar-Free Coconut Carob Truffles

Vegan, Nut-Free, Sugar-Free Coconut Carob Truffles

Coconut Carob Truffles – Vegan, Grain-free, Nut-free, Sugar-free

1/2 cup roasted pumpkin seeds, ground fine in a coffee grinder
1/2 cup carob powder
1/2 cup unsweetened, finely shredded coconut (plus more for rolling)
15 drops NuNaturals Vanilla liquid stevia (or to taste)
1 t. vanilla
1/4 cup coconut milk

Mix all ingredients until thick dough forms. Roll into balls. Roll balls in additional coconut. Refrigerate. Eat.

  8. Clearly, I STILL need to get some pumpkin seeds! Yum, Deanna. We have a vendor at our farmer’s market who makes a very similar truffle each week with carob and each week I go I buy all that she has left. Then Son and I enjoy them for breakfast. I didn’t make it to the farmer’s market this week and Son was not happy with me. πŸ˜‰ But neither was I! Thanks for this recipe. Glad you’re back in coconut land. πŸ™‚
