Thai-Inspired Truffle Treats

I can’t take any credit for this flavor combination. The other night we were eating dinner – Thai lettuce wraps with a coconut milk, peanut butter, lime sauce – when the boys in my life started waxing poetic about how they could drink the sauce and how much it tastes like candy. And, why in the world isn’t there a peanut butter coconut candy? And the brainstorming began.

Now, among the small fry contingent in the house (my son and his buddy who “doesn’t like coconut”) consensus is that these might not live up to the imagined deliciousness. But, I like them. Perhaps you will, too. And they couldn’t be simpler to throw together.

Thai-Inspired Truffle Treats

1/2 cup creamy natural peanut butter
1/4 cup palm sugar
1 T. lime juice
1/2 cup dried, shredded, unsweetened coconut (plus more for rolling)
2 T. thick coconut milk

Combine all ingredients in a medium mixing bowl and blend until a dough forms. Form into small balls. Roll in additional shredded coconut. Eat. Makes about 16.

    Wow. I really expected these to be more difficult. I’ve really got no excuse not to try them … talk about a nearly risk-free foray into Thai food!
    Of course, I’ll probably still be nervous about screwing it up …

      Well, it’s not really Thai food. It’s just using the flavor profile of Thai food. But, yah, it’s super easy. There’s nothing to screw up! The only thing that might cause you grief is if your peanut butter and/or coconut is dryer than mine. (The peanut butter that I get from the grocery store is fairly oily, while that from our local Co-Op where we grind our own is fairly dry. I used the oily kind in this.) If, for some reason, your dryness factor differs, just adjust the amount of coconut milk you use. Easy Peasy!

      Yep, you could leave out the lime juice. You could even throw in a little cocoa if you want a chocolatey version instead of a Thai version. Enjoy!

    I love that sauce, too–but would never have thought to turn it into such delectable treats! My version uses almond instead of peanut butter, but I bet it would be just as good in these. Can’t wait to try them out! And the photos are gorgeous. 🙂
