I haven’t been cooking lately. Not at all. And you know what, I’m okay with that. Everyone needs a break now and then, right? And, I haven’t been eating out. I’ve been living on things like fruit and nut bowls and smoothies. Completely not inspirational.
But today, today I was inspired. I was inspired to make a grain-free, vegan, sugar-free version of our family favorite Bossk Brownies from the Star Wars Cookbook. The kiddo approves, and so does R2D2.
Bossk Brownies
adapted from the Star Wars Cookbook
4 ounces (113 g) dates (about 23 medium dates, or about 3/4 cup)
1/3 cup boiling water
2 T. ground flax seed
1 t. vanilla
1/2 cup (112 g) coconut oil
1/2 cup (28 g) cocoa powder
2/3 cup (50 g) almond meal
1/2 t. baking powder
1/2 t. salt
pinch of powdered stevia (to taste)
1/2 cup unsweetened shredded coconut
Preheat oven to 350°. Grease an 8″ x 8″ baking pan.
In a small bowl, combine dates, boiling water and flax seed. Allow to sit for 10 minutes while dates soften.
Put coconut oil in the bowl of a food processor and pulse until coconut oil is creamy. Add date mixture. Pulse until dates break up, and then process for 5 minutes until mixture is smooth and creamy.
Add the rest of the ingredients except the shredded coconut. Pulse until mixture is thick and well-mixed. Taste for sweetness and add more stevia if desired. Stir in coconut.
Spread batter in prepared pan. (It will be very thick. That’s normal.) Bake for 20 minutes, or until knife inserted in brownie comes out clean.

FAbulous looking recipe, wow! I am totally trying this. I love that there isn’t any xanthan or starches. And I had no idea that a Star Wars Cookbook even exists. I don’t recall brownies from Star WArs, but whatever. 😉 Thanks for such a great SOS submission! xo
Thanks Kim. I don’t think there are any brownies in Star Wars. Bossk is a bounty hunter character. Most of the recipes are just a play on names. But, it’s a fun cookbook, especially for kids. And, yah, I’m trying to play with no gums and starches, too. Brownies are easy because they’re supposed to be all fudgy.

You had me with the pic of R2D2! My chocolate chip breakfast cake is out of the oven. They are great – a little more dense and chewy – more of a bar than cake texture and very, very moist. I’ll definitely try that again. My chocolate coconut bars need a few more minutes in the oven but oh my goodness, the batter was to die for. Thanks again!
