Breakfast Bonanza – recipe, review, give-away!

Update: The contest is now closed. Winner to be announced soon.

Don’t hate me, but I’m one of those morning people. You know – the ones that wake up all bright-eyed and bushy-tailed and ready to start the day. One of those totally-chipper-without-a-cup-of-coffee kind of gals.

It’s disgusting, isn’t it?

Maybe it’s all those years of eating cereal while watching the Flintstones and sitting in my dad’s recliner.

Mornings just make me happy.

And breakfast. Breakfast makes me happy, too. But I tend to get in a rut, eating the same thing day after day.

What better way to get out of a rut than to rise to a challenge. Hallie, from Daily Bites recently posted a Build a Better Breakfast Challenge. How could I resist that? And, why don’t we make it raw, too – just to keep up with our April in the Raw theme.

Jelly Jar O' Yum

Jelly Jar O' Yum

Breakfast Banana Split Parfait

2 t. chia seeds
1 t. flax seed
1 T. raw cocoa powder
1 T. almond butter
1/2 cup almond milk
sweetener to taste (I used 2 t. agave, but you could use stevia, maple syrup, or whatever floats your boat)

Mix all ingredients in a bowl or measuring cup and pop in the freezer for 10-15 minutes.

Layer in a jar with 1 chopped banana. Top with a sprinkling of almonds and a few raw cherries.

If this recipe is not to your liking, I know where you can find 25 more wholesome breakfast ideas: Ricki Heller’s latest e-book, Good Morning! Breakfasts without Gluten, Sugar, Eggs or Dairy. Ricki has used her amazing creativity to come up with delicious recipes that will get your day started right.

How about Grain Free Veggie Granola, my current breakfast obsession? (Is it bad to eat the same thing for a week straight? It can’t be bad when it tastes this good AND it has veggies in it!)

Or, perhaps a Cran-berry Smoothie is more to your liking?

Cran-berry Smoothie

Ricki’s e-book is filled with recipes I want to try, if I can just get past my current granola obsession….

Sadly, the one thing lacking from breakfast is dessert. Never fear, Ricki has you covered there, too. Her ebook, Desserts Without Compromise: Treats for Everyone With No Gluten, Dairy, Eggs or Sugar is filled with desserts that everyone will love. Like perhaps these Grain-Free Coconut Macaroons:

You didn’t think I’d show you all this and just leave you hanging, did you? Did you notice that the title of this post says there’s a give-away? That’s right, one lucky reader is going to win a copy of not one, not two, but all three of Ricki’s wonderful e-books. How to enter? It’s simple:

  1. Mandatory entry: just leave a comment below telling me what your favorite breakfast food is.
  2. Bonus entry: like Diet Dessert and Dogs on Facebook
and then come back and leave a comment telling me you did.
  3. Bonus entry: Tweet a link to this post, including @themommybowl and then come back and tell me you did.
  4. Bonus entry: Like my brand new Facebook page. Come on, don’t make me be the only one that likes it. Pretty please?

This contest will be open from now until April 29th. Good luck!

  1. Amanda says:

I liked the Facebook page! Thanks for the giveaway!

  2. Amanda says:

Ohh and I forgot to share my favorite breakfast…..I take gluten free oats and mix with flax seeds, cashews, almonds, cranberries, cinnamon, a small bit of jelly, and boiling water. It is filling, earthy, and delicious. I eat this many weekday mornings in my office at work. Thanks again for the giveaway!

    • Deanna says:

Sounds delicious, Amanda. I used to eat oats for lunch every day at work, because they were quick and easy. But, then I figured out I was gluten intolerant and I had not been eating gluten-free oats. I haven’t incorporated any grains back in on that regular of a basis again. One of these days I should try a bowl of oatmeal as a treat though.

  3. Ricki says:

Your photos are just stunning, Deanna! I’m so glad you like the granola–it’s one of my faves, too. And funny, I *used* to be a morning person, but no so much any more. But my love of breakfast has never waned. ;) Your parfait looks amazing–I’m going to make it without the banana (since I’m not allowed right now–wah!) and I am sure it will still be fantastic. Thanks so much for hosting the giveaway! :D

    • Deanna says:

Thanks Ricki! You can eat berries, right? The chocolate chia would be great with strawberries. When they’re in season, I will definitely try it that way. (When does spring get here again?)

      • Ricki says:

        Yes–berries are fine–will do! Spring? What’s that–?? (I think I’ve forgotten, it’s been so long. . . .) ;)

  4. JamieAnne says:

I’m an Irish oatmeal gal, and smoothies. I love smoothies.

    • Deanna says:

I like spoonable smoothies. For some reason, I need to actually eat and not just drink in the morning. I do drinkable smoothies for lunch sometimes, though. :)

  5. Jenny R says:

I have liked Diet, Dessert and Dogs. My favorite morning food is Almond-Banana-Flax pancakes with Agave syrup. Mmmmmm. I love pancakes. They are my favorite food.

  6. Pingback: Diet, Dessert and Dogs » Coconut Pancakes

  7. I like to have waffles with different toppings on – honey,maple syrup,strawberry jam…
I already like DDD on Facebook!

  8. caryann hancock says:

I have already liked the FB page. One of of my faves!

  9. caryann hancock says:

my favorite breakfast is any hot cereal! I love it any which way (except plain) I’ve been eating it with cocoa powder and peanut butter (or peanutbutter chips) so that it tastes like a peanut butter cup.

  10. Kathy says:

My favorite breakfast is either an apple w/peanut butter or a smoothie w/greek yogurt, soy milk (but I’m going to switch to almond milk & give it a try), flax seed, & what every fruit I happen to have on hand (lately it’s been banana & strawberry on occasion it’s blueberries too).

  11. Kathy says:

    I like DDD on FB

  12. Kristi says:

My favorite breakfast food is a Green Monster.

  13. Rachel says:

My new favorite breakfast food is a green smoothie … frozen strawberries, mango, almond milk, and kale! But I love granola and really want to try your raw recipe!

  14. Rachel says:

Oh, and I love DD&D! Definitely a fan on FB.

  15. April says:

I would love the recipes! I love trying new variations and I already have a complex pallet, these would be wonderful references!

  16. alisa joy says:

favorite breakfast food? hmm… i eat oatmeal on an almost daily basis. i just take plain rolled oats, ground flax, and chia seeds and cover them with boiling water. it’s practically instant and easy to bring to work. sometimes i add cocoa powder or cacao nibs (because i am a chocolate junkie!). other days i cook a sweet potato and eat it plain or with nuts sprinkled on top. so good!

  17. April says:

I already like Diet, Dessert and Dogs on facebook as well. :)

  18. Pattie Baker says:

I love breakfast – and I have lots of favorites but the standby is always gluten free oats with chia and hemp seeds, ribbon coconut then topped with blueberries and goat milk kefir! YUM!

  19. bitt says:

too many to list! chia pudding and granola are at the top.

    • Deanna says:

That doesn’t surprise me at all that you’d be a chia pudding and granola person. By the way, I made Ricki’s granola recipe raw by dehydrating it instead of cooking it. Worked great!

  20. bitt says:

I like DD and D on facebook

  21. This looks great. I wonder if I would like the mixture from the freezer. Such a good idea. I don’t like a pudding texture, but putting it in the freezer might work for me. Thanks.

    • Deanna says:

The texture of this is a little thinner than pudding. It’s almost more of a sauce. If you add more chia or mix that part up the night before and put it in the fridge it would be more pudding like. I just like the cold temp of the brief time in the freezer.

  22. Nicole says:

My favorite breakfast food is Love Grown Foods Oat Clusters & Love granola atop my homemade maple pudding made with MimicCreme. Yum!

  23. Karen says:

My favorite breakfast is a muffin and a cup of tea. My muffins are all nut flour based….and have flax and chia added in and are just power packed little nutrition bundles. They are quick to make, freeze well, and are portable…. But the minute I stop long enough to make my tea and sit down to eat them I just relax into it…. Nothing like it…. Yum! Well, that’s my favorite breakfast on work days or have to get somewhere days. Home days? Scrambled eggs with fresh veggies on the side (tomato slices, pepper slices, avocado slices…. whatever is in season. Love it!). :^)

Your parfait is looking pretty good though…

    • Deanna says:

Your muffins sound delicious. Ricki has some great-sounding muffin recipes in her e-book. They’re next on my list of things to try.

  24. katrina says:

i just recently fell in love with green smoothies for breakfast, they are so refreshing. love your blog!

  25. Marty says:

Aside from finding another great gluten-free vegan blogger through Ricki, she’s a fav and I’d LOVE, LOVE to win her 3 cookbooks! Favorite breakfast? Pancakes or waffles, next to fresh squeezed juice (any), or a fresh fruit smoothie!

    • Deanna says:

I was just talking to someone about how I have a juicer and I never use it. I should give it a whirl again one of these days. Might be a good way to get some more veggies into me and the kiddo.

  26. Ashlie says:

I know it’s weird, but my favorite breakfast is a baked sweet potato with plenty of cinnamon and few toasted pecans sprinkled on top!

    • Deanna says:

Not weird at all – it sounds delicious! And, Ricki has a sweet almond sauce in her e-book that would be GREAT atop a sweet potato.

      • Ricki says:

Actually, I created that sauce specifically to go over baked sweet potato–one of my “go-to” breakfasts dishes! :)

  27. Kris @ GLOW says:

I love Ricki’s recipes! Thank you for so kindly offering this giveaway! Breakfast is my favorite meal, so to pick one thing is pretty tough…wonderful, buttery, fluffy pancakes are sounding pretty perfect right now, though.

  28. Elizabeth says:

This is a great giveaway! So excited about Ricki’s new book.

  29. My favorite breakfast food is probably granola =) (Of all types really =)

  30. Amber Shea @Almost Vegan says:

I’m not even sure how to choose a favorite breakfast food…for special mornings, I’d say [vegan] nutella crepes, but on a day to day basis, I think coffee and cereal will always be what I crave. :)

  50. penny says:

Oatmeal with sunbutter or green monster.

  51. Ruth says:

Breakfast is my favorite part of the day, too! The best for me is a granola fruit-salad over yogurt. Versatile and complete.

  52. Breakfast has always been my favorite meal of the day too! My absolute favorite breakfast is pumpkin oatmeal with Naturally Nutty’s pepita butter. I’ve had to start a very strict anti-candida diet though for health reasons, and I miss my oatmeal so much… This new diet has left me without meal ideas or variety, so I’d REALLY appreciate Ricki’s book! :)

  53. Pat Meadows says:

    Hi,

As a (necessarily) gluten-free vegan, I’d sure love to have Ricki’s books. I’d buy them, but my husband and I just moved from Pennsylvania to Maine, and I’ve spent all I can spend for quite a while fixing up our new house – it really needed a lot of work! So I’ll have to save my pennies for a long time – unless I get lucky, of course.

    Thanks for running the giveaway!
    Pat Meadows

  54. Pat Meadows says:

Oops, forgot to mention my favorite breakfast food. Right now, it’s whole-grain gluten-free toast with Fluffy Peanut Butter. Fluffy Peanut Butter – put approximately equal quantities of silken tofu and PB in your food processor. Add either a little apple butter (which is the best) or a little honey. (Very little sweetener – about a tsp of either one). Process until smooth. Cocoa powder can also be added to produce Chocolate Fluffy Peanut Butter! Both are better chilled for a few hours. Fluffy PB can be kept for a few days in the fridge. If you don’t eat it all up first, that is!

    Pat

  55. Mari says:

My favorite breakfast food is oat bran! Delicious, and keeps me full way longer than anything else I’ve tried. :)

  56. Mari says:

I like Diet, Dessert and Dogs on Facebook! (M. Elise)

  57. Mari says:

I like you on Facebook too. ;) (M. Elise)

Thanks for hosting this giveaway! I definitely want to get my hands on that veggie granola recipe!

  58. nik says:

My favorite breakfast is a peanut butter kiwi sandwich…super yummy!

  59. Raquel says:

I “liked” DDD and Mommybowl, tweeted link and my fave breakfast food of the moment is Raw Oats/Chia seeds with almond butter, and berries, soaked in hemp milk!

  60. olgasingh says:

I love cookies for breakfat & chocolate! With smoothie. Or ice-cream. Or cake. Who am I kidding, I love that stuff anytime of the day! :)

  61. olgasingh says:

And I “liked” yours and Ricki’s Facebook pages! By the way, I love the cookie photo on your facebook! Makes me want to eat it right now.

  62. Meghan says:

I’m a big hot cereal lover – since going g-free I’ve really missed my oatmeal (and haven’t been brave enough to try any certified gf oats, since I’m pretty sure that oats have always given me stomach problems anyway). I just recently discovered how delicious cream of buckwheat is; stir in a little nutbutter and put a bit of fruit in, and I’m in love!

  63. Kathryn says:

You’ve always got such great ideas and never fail to introduce me to great sites! I happily “liked” both pages. My favorite breakfast is my almond meal breakfast cake. =D

  64. conniex721 says:

I liked both facebook pages! My favorite breakfast is steel cut oatmeal with a spoonful of peanut butter, a tbl of jelly, some sliced bananas, and a sprinkling of nuts. PB&J in a bowl! I do like chia seeds though, I could start eating more chia seed puddings like this one!

  65. Yum! This is my kind of breakfast. :) Don’t you just adore Ricki? She’s one of my dearest bloggy friends and a talented cook. Thanks for sharing her work!!

My favorite breakfast…right now it’s oatmeal with greek yogurt, berries, and sliced almonds.

  66. Kristin says:

Hello! That brekkie looks tasty! I want! I am in the winter/summer food transition, otherwise known as spring, I suppose… my tastes for foods always goes through a significant change. My favorite breakfasts right now are light and cool. I actually picked up more hemp protein today for smoothies – switching off days of smoothies and green juices. Thanks to you and Ricki for the giveaway. I’m in dire need of more gf-vegan go-tos and would love to win. I liked both of your FB pages.

  67. Nicole says:

My favorite breakfast to make for myself is buckwheat pancakes with honey and cinnamon in them (they almost tastes like french toast), topped with chopped roasted almonds and maple syrup. Yum!

  68. Gillian says:

Favorite breakfast — always oatmeal. I use steel cut oats and soak overnight, and then cook with some chopped pecans, goji berries, raisins and craisins. I also serve it with a BIG spoonful of ground cinnamon and whatever fresh berries I can find. That is standard breakfast fare for us every day of the year! Also, I limit my intake of starchy carbs to the morning after I have worked out, so this is perfect.

  69. Elle says:

Favorite breakfast food… for the longest time was eggwhite omelets with tons of fresh veggies cooked in… now I prefer some kind of grain. Usually quinoa, with fruit. And occasionally a splurge of nut butter.

Love your recipes. I am about to make the carrot loaf.

I love potato/swt potato pancakes topped with mashed avocado and either a poached egg or fried egg. But I am always looking for egg-free breakfast ideas for my daughter who can’t have gluten, dairy or eggs.

  72. Nikki Orth says:

I am a moning person too! But I also looooove coffee with coconut milk in the morning. Usually my favorite breakfasts have eggs but I recently made a coconut zucchini bread and it’s my new favorite :)

And I just “liked” both pages on fb… And I really do “like”!

  73. Jana says:

I love, love, love French toast.

  74. Ari says:

Breaky is my favourite meal, probably due to having insanely low sugar levels in the morning and thus enjoying EVERY bite. I mostly eat eggs scrambled with butter and some millet flakes (gluten free oats) on the side. Especially delish is millet cooked with banana and cherries, with some cocoa powder mixed in! It’s like eating dessert :D

  75. Apryl says:

I’ve been reading Riki’s website for awhile now, but just discovered yours. What a treat! I look forward to more of your recipes and ideas, and also to hopefully winning Riki’s cookbook. Off to go “Like” a couple blogs on FB!

  76. Apryl says:

Okay, “Like” number one for DDD: done!

  77. Your raw banana split parfait looks *nom*, I’ll have to give it a whirl as I’m increasingly intrigued by raw food.

My favorite breakfast is oatmeal/porridge. It’s plain; it’s simple, and can be dolled up anyway a person fancies it. It’s easy to veganize. It’s even good raw (we can thank Angela at Oh She Glows for those <a href="http://ohsheglows.com/2010/04/08/easy-vegan-overnight-oats/" title="yummy vegan overnight oats")! You don’t even have to use oats for it — the variety of whole grains and topping combinations may leave you never having the same bowl of oatmeal/porridge twice. Plus, you always feel good after eating it. And that, to me, is the ultimate breakfast food.

Oh, and for the record I became a fan of both yours and Ricki’s Facebook pages, as well as tweeted about this (I’m @freshlyveg).

  82. Janis S says:

I like oatmeal for breakfast with ground flax seed and cinnamon.

  83. Candice Pike says:

My new favourite breakfast is a soaked porridge of ground millet, quinoa, and amaranth with a new topping each time – yogurt, berries, nuts, chocolate . . .

  84. Yum!! Great ideas!! Thanks for making me hungry :)

  85. Jacq says:

My new favorite is chia pudding similar to your Breakfast Banana Split and I think I saw the idea for it on Diet, Dessert and Dogs. The original recipe was made in a jar of almond butter that was mostly empty and had blueberries. I made mine like this:
    1/4 cup chia seeds
    1 cup almond milk
    1 tsp of almond butter
cut up fresh strawberries (as many as you want)
Mix all of the above and then go get ready for work. Come back 20 minutes later and it has become a delicious pudding. Drizzle with a little bit maple syrup or agave nectar. (I love maple).

  86. Kathy says:

my current favorite b-fast is apple w/p.b. & smoothie (what’s in the smoothie varies depending on what I feel like having that a.m. & what’s in the house lol).
