Breakfast Bonanza – recipe, review, give-away!

Don’t hate me, but I’m one of those morning people. You know – the ones that wake up all bright-eyed and bushy-tailed and ready to start the day. One of those totally-chipper-without-a-cup-of-coffee kind of gals.

It’s disgusting, isn’t it?

Maybe it’s all those years of eating cereal while watching the Flintstones and sitting in my dad’s recliner.

Mornings just make me happy.

And breakfast. Breakfast makes me happy, too. But I tend to get in a rut, eating the same thing day after day.

What better way to get out of a rut than to rise to a challenge. Hallie, from Daily Bites recently posted a Build a Better Breakfast Challenge.  How could I resist that? And, why don’t we make it raw, too – just to keep up with our April in the Raw theme.

Breakfast Banana Split Parfait

2 t. chia seeds
1 t. flax seed
1 T. raw cocoa powder
1 T. almond butter
1/2 cup almond milk
sweetener to taste (I used 2 t. agave, but you could use stevia, maple syrup, or whatever floats your boat)

Mix all ingredients in a bowl or measuring cup and pop in the freezer for 10-15 minutes.

Layer in a jar with 1 chopped banana. Top with a sprinkling of almonds and a few raw cherries.

    Ohh and I forgot to share my favorite breakfast…..I take gluten free oats and mix with flax seeds, cashews, almonds, cranberries, cinnamon, a small bit of jelly, and boiling water. It is filling, earthy, and delicious. I eat this many weekday mornings in my office at work. Thanks again for the giveaway!

      Sounds delicious, Amanda. I used to eat oats for lunch every day at work, because they were quick and easy. But, then I figured out I was gluten intolerant and I had not been eating gluten-free oats. I haven’t incorporated any grains back in on that regular of a basis again. One of these days I should try a bowl of oatmeal as a treat though.

    Your photos are just stunning, Deanna! I’m so glad you like the granola–it’s one of my faves, too. And funny, I *used* to be a morning person, but no so much any more. But my love of breakfast has never waned. 😉 Your parfait looks amazing–I’m going to make it without the banana (since I’m not allowed right now–wah!) and I am sure it will still be fantastic.       Thanks Ricki! You can eat berries, right? The chocolate chia would be great with strawberries. When they’re in season, I will definitely try it that way. (When does spring get here again?)

      I like spoonable smoothies. For some reason, I need to actually eat and not just drink in the morning. I do drinkable smoothies for lunch sometimes, though. 🙂

    my favorite breakfast is any hot cereal! I love it any which way (except plain) I’ve been eating it with cocoa powder and peanut butter (or peanutbutter chips) so that it tastes like a peanut butter cup.

    My favorite breakfast is either an apple w/peanut butter or a smoothie w/greek yogurt, soy milk (but I’m going to switch to almond milk & give it a try), flax seed, & what every fruit I happen to have on hand (lately it’s been banana & strawberry on occasion it’s blueberries too).

    favorite breakfast food? hmm… i eat oatmeal on an almost daily basis. i just take plain rolled oats, ground flax, and chia seeds and cover them with boiling water. it’s practically instant and easy to bring to work. sometimes i add cocoa powder or cacao nibs (because i am a chocolate junkie!). other days i cook a sweet potato and eat it plain or with nuts sprinkled on top. so good!

    I love breakfast – and I have lots of favorites but the standby is always gluten free oats with chia and hemp seeds, ribbon coconut then topped with blueberries and goat milk kefir! YUM!

      That doesn’t surprise me at all that you’d be a chia pudding and granola person. By the way, I made Ricki’s granola recipe raw by dehydrating it instead of cooking it. Worked great!

  21. This looks great. I wonder if I would like the mixture from the freezer. Such a good idea. I don’t like a pudding texture, but putting it in the freezer might work for me. Thanks.

      The texture of this is a little thinner than pudding. It’s almost more of a sauce. If you add more chia or mix that part up the night before and put it in the fridge it would be more pudding like. I just like the cold temp of the brief time in the freezer.

    My favorite breakfast is a muffin and a cup of tea. My muffins are all nut flour based….and have flax and chia added in and are just power packed little nutrition bundles. They are quick to make, freeze well, and are portable…. But the minute I stop long enough to make my tea and sit down to eat them I just relax into it…. Nothing like it…. Yum! Well, that’s my favorite breakfast on work days or have to get somewhere days. Home days? Scrambled eggs with fresh veggies on the side (tomato slices, pepper slices, avocado slices…. whatever is in season. Love it!). :^)

    Your parfait is looking pretty good though…

      I was just talking to someone about how I have a juicer and I never use it. I should give it a whirl again one of these days. Might be a good way to get some more veggies into me and the kiddo.

    I know it’s weird, but my favorite breakfast is a baked sweet potato with plenty of cinnamon and few toasted pecans sprinkled on top!

      Not weird at all – it sounds delicious! And, Ricki has a sweet almond sauce in her e-book that would be GREAT atop a sweet potato.

    I’m not even sure how to choose a favorite breakfast food…for special mornings, I’d say [vegan] nutella crepes, but on a day to day basis, I think coffee and cereal will always be what I crave. 🙂

  53. Breakfast has always been my favorite meal of the day too! My absolute favorite breakfast is pumpkin oatmeal with Naturally Nutty’s pepita butter. I’ve had to start a very strict anti-candida diet though for health reasons, and I miss my oatmeal so much… This new diet has left me without meal ideas or variety, so I’d REALLY appreciate Ricki’s book! 🙂

    As a (necessarily) gluten-free vegan, I’d sure love to have Ricki’s books. I’d buy them, but my husband and I just moved from Pennsylvania to Maine, and I’ve spent all I can spend for quite a while fixing up our new house – it really needed a lot of work! So I’ll have to save my pennies for a long time – unless I get lucky, of course.

    Oops, forgot to mention my favorite breakfast food. Right now, it’s whole-grain gluten-free toast with Fluffy Peanut Butter. Fluffy Peanut Butter – put approximately equal quantities of silken tofu and PB in your food processor. Add either a little apple butter (which is the best) or a little honey. (Very little sweetener – about a tsp of either one). Process until smooth. Cocoa powder can also be added to produce Chocolate Fluffy Peanut Butter! Both are better chilled for a few hours. Fluffy PB can be kept for a few days in the fridge. If you don’t eat it all up first, that is!

    I’m a big hot cereal lover – since going g-free I’ve really missed my oatmeal (and haven’t been brave enough to try any certified gf oats, since I’m pretty sure that oats have always given me stomach problems anyway). I just recently discovered how delicious cream of buckwheat is; stir in a little nutbutter and put a bit of fruit in, and I’m in love!

    Hello! That brekkie looks tasty! I want! I am in the winter/summer food transition, otherwise known as spring, I suppose… my tastes for foods always goes through a significant change. My favorite breakfasts right now are light and cool. I actually picked up more hemp protein today for smoothies – switching off days of smoothies and green juices.     My favorite breakfast to make for myself is buckwheat pancakes with honey and cinnamon in them (they almost tastes like french toast), topped with chopped roasted almonds and maple syrup. Yum!

    Favorite breakfast — always oatmeal. I use steel cut oats and soak overnight, and then cook with some chopped pecans, goji berries, raisins and craisins. I also serve it with a BIG spoonful of ground cinnamon and whatever fresh berries I can find. That is standard breakfast fare for us every day of the year! Also, I limit my intake of starchy carbs to the morning after I have worked out, so this is perfect.

    Favorite breakfast food… for the longest time was eggwhite omelets with tons of fresh veggies cooked in… now I prefer some kind of grain. Usually quinoa, with fruit. And occasionally a splurge of nut butter.

    Breaky is my favourite meal, probably due to having insanely low sugar levels in the morning and thus enjoying EVERY bite. I mostly eat eggs scrambled with butter and some millet flakes (gluten free oats) on the side. Especially delish is millet cooked with banana and cherries, with some cocoa powder mixed in! It’s like eating dessert 😀

  78. Your raw banana split parfait looks *nom*, I’ll have to give it a whirl as I’m increasingly intrigued by raw food.

    My favorite breakfast is oatmeal/porridge. It’s plain; it’s simple, and can be dolled up anyway a person fancies it. It’s easy to veganize. It’s even good raw (we can thank Angela at Oh She Glows for those <a href="http://ohsheglows.com/2010/04/08/easy-vegan-overnight-oats/&quot; title="yummy vegan overnight oats")! You don’t even have to use oats for it — the variety of whole grains and topping combinations may leave you never having the same bowl of oatmeal/porridge twice. Plus, you always feel good after eating it. And that, to me, is the ultimate breakfast food.

    Oh, and for the record I became a fan of both yours and Ricki’s Facebook pages, as well as tweeted about this (I’m @freshlyveg).

    My favorite breakfast is 1/3 cup oats, 2T chia seeds, 1T all natural apple butter, 1T almond butter, cinnamon and unsweetened almond milk left in the fridge over night! I wake up in the morning to that and a cup of organic coffee latte made with almondmilk and Stevia 🙂 mmm!

    My new favorite is chia pudding similar to your Breakfast Banana Split and I think I saw the idea for it on Diet, Dessert and Dogs. The original recipe was made in a jar of almond butter that was mostly empty and had blueberries. I made mine like this:
    1/4 cup chia seeds
    1 cup almond milk
    1 tsp of almond butter
    cut up fresh strawberries (as many as you want)
    Mix all of the above and then go get ready for work. Come back 20 minutes later and it has become a delicious pudding. Drizzle with a little bit maple syrup or agave nectar. (I love maple).

    Homemade sourdough toast spread with margarine and homemade marmalade…..but before even starting on that, I have a mean tofu scramble!
    To wash it all away, a pot of tea.
    Then ready to start the day…….. 🙂

    I tried putting a few chocolate chips in my cooked quinoa flakes this morning–it was a lot like Coco Wheats! I also like add flaxseed meal–it gives a nice consistency.

    my favorite breakfast is two eggs, over medium in butter with 1/2 my plate full of kale sauteed with garlic. maybe a piece of gf toast with butter to go along with… and a cup of roasted dandelion root tea, hot!
