Raw Pesto Guac Salad

Some things in life are ugly.

Industrial waste. Scowling faces. Hairless dogs. (Okay maybe hairless dogs are so ugly they’re cute.)

Lately, the state of my health has been ugly. I’ve caught one virus after another. My energy is low. My motivation is lower. My weight is up. My fitness is down. Ugly.

It’s time to do something to give this ugly a kick in the butt.

So, I’m embarking on 21 days of raw food. Technically, I’ve embarked. I started yesterday.

I’m not a huge proponent of crash diets or radical shifts in what one eats. But, really, this isn’t that radical for me. I’d already been eating about 75% raw. Sadly, that 25%? It was also a bit ugly.

Dinner last night? It was ugly, too. But, oh so healthy and delicious.

Ugly But Delicious - Pesto Guac Salad

Raw Pesto Guac Salad

1/2 avocado
1 cup grape tomatoes
1/2 cup loosely packed basil
1 T. lemon juice
1 T. nutritional yeast
1 garlic scape
1/4 cup water
pinch salt

Put all ingredients in blender or food processor and process until smooth. Toss with 1 cup chopped portobello mushrooms & 1 cup chopped zucchini. (The second day I ate the leftovers with a big handful of lettuce, as well.)

Serves 2.

    Delicious! When I’m feeding myself I don’t worry much about how things look – and sometimes a big bowl that I’ve just thrown together turns out to be the most incredibly flavourful meal.

  2. Well that sounds pretty darn good (but then again, is anything that features avocados BAD? I think not. Looking forward to hearing how the entirely raw thing goes for you! I’m trying to put a little more raw in my diet (wait–do your ice cream sandwiches for dinner count as eating raw & better 😀 ), figure it can’t hurt.

      With ya on the “nothing with avocado could be bad.” And YES – eating the raw ice cream sandwiches for dinner counts as eating raw. I had one for dessert on Monday.

      Last night I made raw cocoa nib cookie dough balls, which I shared with friends and neighbors and were a HUGE hit. I think they may be destined to be the cookie in my next batch of ice cream sandwiches. (Maybe even tonight.)

  3. I’d eat anything with avocado in it! No matter what it looks like 🙂 Your raw ice cream sandwiches look mighty fine too!
    Re: you being sick a lot lately, I’ve just started giving my kids and I a shot of olive leaf extract daily. I’d done a load of reading about the stuff and thought it was about time to try it out. My son gets sick all winter long (we are in winter here in Australia!) and gets wheezy too. It cleared up his chesty cold right away and he seems to be heaps better. It’s only been a few weeks but I have high hopes for this stuff and have my fingers crossed for a healthy winter ahead!
